Figured I might get a post going with my UI here. Mine's going to be a bit different from most since I'm gaming across 3 screens and it really increases the amount of screen real estate you have to space addons out on.
Here's a shot of it out of combat:
The image is pretty grainy zoomed in, but it's the best format I could get it uploaded in. The black bars I added in are roughly where the monitor bezel breaks are. The image is rendered underneath the bezel so you get a fluid transition when objects extend across more than one screen. WoW has quite good compatibility with nVidia surround, the only downside is the image gets a little bit stretched on the outside screens. Another thing which isn't really a downside is that the depth of field is not uniform across all 3 screens - objects render a lot further on the outer 2 screens.
I recently reworked the entire UI so I don't have any in-combat screens to share yet, but I'll try to get one posted tomorrow.
A quick breakdown of the addons visible in the picture:
Chatter - gives the chatbox a nice skin with lots of customization options
Recount - I use recount to track my latency and fps as well as dps. I have the raid dps window open usually because when alone it's a good way to get a live stream of what your dps spikes look like.
X-perl Unit Frames - I know a lot of people have an aversion to X-perl but it works for me since all it has to do is show me, what i'm looking at and what it's looking at lol.
Energy Watch - Customizable energy bar.
Bartender4 - I don't use any aftermarket all-in-one UI mods I just use bartender and MoveAnything to adjust action bars and other UI items.
Omen
Sexy Map - A sexy map is a must for any UI.
TipTac - Not really visible but it's not combat related so I'll mention it. It's a tooltip replacement addon that really gives a snazzy feel to the standard Blizzard tooltips. You can also customize it to show character specs in the tooltip which is very useful for quickly determining who in the party needs tricks.. :P
I use a number of other addons that aren't visible out of combat and I will go into those once I have uploaded a raiding screenshot. Being able to put the chat window on a separate monitor opens up so much space on the main page, which helps maintain most UI elements close to the bottom of the page, with only the most important combat related addons extending up closer to the middle of the screen.
